Chia Pudding

Lately I’ve discovered this wonderful pudding while browsing through the internet. I mean the name pudding just sounds delicious and who doesn’t like pudding?

It’s really easy to make, you just prepare it the night before and you have an easy to go breakfast in the morning. And it’s super dooper healthy. Chia seeds are loaded with nutrients that can have important benefits for your body and brain. For example they have a high amount of antioxidants that help to protect the delicate fats in the seeds. They also have various benefits for health. And they have only like 137 (good!) calories per about 2tbsp’s. Impressive! Chia seeds are high in calcium, magnesium, phosphorus and protein. All of these nutrients are essential for bone health.Yus! Ok no wonder, chia seeds are among the group of so called “superfoods”…

Ok, lets stop with the benefits chia seeds have on your health and let’s start with the recipe so you can actually experience all those good things about them and have a delicious breakfast for tomorrow.

Chia seeds are soaked in milk and often people use plant milk. I’ve never tried that but I will very soon. Sounds really delicious!

Chia Pudding

Serves 2 (for a small breakfast or 1 for a normal morning breakfast..Chia Pudding is addicting so you better prepare the recipe below for one..and it’s healthy right?)

Chia Pudding

  • 4tbsp chia seeds
  • 200-300 ml milk (depends on how thick you want your pudding to be)
  • 1/2 tsp vanilla extract (optional)

Topping

  • 2 tbsp honey of choice
  • 1 banana (cut into thin slices)
  •  1/2 tsp cinnamon
  • 4 tbsp natural yogurt
  • a handful blueberries

Method

  1. Mix the chia seeds and milk in a bowl, add the vanilla extract (or any other flavor you like) and stir well to make sure that all seeds are soaked in the milk.
  2. Put the bowl in the fridge and leave it to soak over night or for a couple of hours.
  3. Put 1 tbsp of honey on the chia pudding, add the yogurt and put the banana slices on top. Pour the remaining honey on the banana slices and sprinkle with cinnamon and add the blueberries.
  4. Enjoy!

You can leave out step 3  and just go crazy with your own toppings. What about apple, redcurrant, maple syrup and some of the homemade blueberry jam from my last post…

I know chia seeds can be very pricey, but hey, they are worth every cent you pay!

I made the Chia Pudding this morning and my mum and sister immediately said, I should make that for breakfast for everyone tomorrow.
